Banana Oat Pancakes with Walnuts & Berries
These pancakes are soft, naturally sweet from bananas, and full of fiber, healthy fats, and antioxidants. They’re moist enough that you don’t even need syrup, just a handful of berries and crunchy walnuts on top.
- 1/3 cup old-fashioned oats
- 1 banana
- 1 egg
- 1 tbsp nut butter peanut, almond, cashew
- 2-3 tbsp pistachio, almond, oat, or coconut milk (if batter is too thick)
- 1/4 tsp baking powder
- 1 pinch cinnamon
- 1 splash vanilla extract
- 1 handful berries
- 1 tbsp walnuts chopped
- 1 tsp coconut oil (for cooking)
Blend oats into a fine flour
Add banana, egg, nut butter (or cottage cheese), baking powder, cinnamon, and vanilla. Blend until smooth. Add a splash of nut milk if needed to loosen.
Heat coconut oil over medium-low. Pour small pancakes (~3 inches). Cook 2-3 min until bubbles form, then flip and cook another 1-2 min.
Top with berries and walnuts
- Add a scoop of protein powder for more protein.
- Sprinkle chia or flax seeds into the batter for omega‑3s and fiber.
- Swap walnuts for pecans or pistachios.
- Use frozen organic berries if fresh aren’t available, just thaw before topping.
