These pancakes are soft, naturally sweet from bananas, and full of fiber, healthy fats, and antioxidants. They’re moist enough that you don’t even need syrup, just a handful of berries and crunchy walnuts on top.

Banana Oat Pancakes with Walnuts & Berries

Ingredients
  

  • 1/3 cup old-fashioned oats
  • 1 banana
  • 1 egg
  • 1 tbsp nut butter peanut, almond, cashew
  • 2-3 tbsp pistachio, almond, oat, or coconut milk (if batter is too thick)
  • 1/4 tsp baking powder
  • 1 pinch cinnamon
  • 1 splash vanilla extract
  • 1 handful berries
  • 1 tbsp walnuts chopped
  • 1 tsp coconut oil (for cooking)

Method
 

  1. Blend oats into a fine flour
  2. Add banana, egg, nut butter (or cottage cheese), baking powder, cinnamon, and vanilla. Blend until smooth. Add a splash of nut milk if needed to loosen.
  3. Heat coconut oil over medium-low. Pour small pancakes (~3 inches). Cook 2-3 min until bubbles form, then flip and cook another 1-2 min.
  4. Top with berries and walnuts

Notes

  • Add a scoop of protein powder for more protein.
  • Sprinkle chia or flax seeds into the batter for omega‑3s and fiber.
  • Swap walnuts for pecans or pistachios.
  • Use frozen organic berries if fresh aren’t available, just thaw before topping.
