Method
- Blend oats into a fine flour
- Add banana, egg, nut butter (or cottage cheese), baking powder, cinnamon, and vanilla. Blend until smooth. Add a splash of nut milk if needed to loosen.
- Heat coconut oil over medium-low. Pour small pancakes (~3 inches). Cook 2-3 min until bubbles form, then flip and cook another 1-2 min.
- Top with berries and walnuts
Notes
- Add a scoop of protein powder for more protein.
- Sprinkle chia or flax seeds into the batter for omega‑3s and fiber.
- Swap walnuts for pecans or pistachios.
- Use frozen organic berries if fresh aren’t available, just thaw before topping.
