Berry Cobbler
A cozy, colorful dessert bursting with antioxidants
There’s something about a berry cobbler that feels like home. Warm, jammy fruit tucked under a golden, tender crust, served with a little dollop of yogurt or coconut cream if you like.
I love this recipe because it’s simple and flexible. You can use whatever berries are in season (or frozen in your freezer!), blueberries, raspberries, blackberries, or a mix. The colors alone are enough to lift your mood, and the flavors are even better. Berry Filling
- 4 cups mixed berries (fresh or frozen)
- 2 tbsp maple syrup or honey (adjust to taste depending on berry sweetness)
- 1 tbsp lemon juice
- 1 tbsp cornstarch (or arrowroot)
Cobbler Topping
- 1 cup almond flour
- 2 tbsp coconut sugar or maple sugar
- 1 tsp baking powder
- 1 pinch salt
- 1 egg lightly beaten
- 3 tbsp melted coconut oil (or butter)
- 2 tbsp nut milk (almond, pistachio, or coconut)
- 1/2 tsp vanilla extract
Preheat oven to 375°F. Grease an 8×8-inch baking dish or similar.
Make the berry filling: In a bowl, mix berries, maple syrup/honey, lemon juice, and cornstarch. Pour into the baking dish.
Make the cobbler topping: In another bowl, combine almond flour, sugar, baking powder, and salt. Stir in egg, coconut oil, milk, and vanilla until a thick batter forms.
Assemble: Drop spoonfuls of the topping evenly over the berries (it will spread as it bakes).
Bake for 30-35 minutes, until the topping is golden and the berries are bubbling.
Cool slightly before serving. Enjoy warm, plain or with a spoonful of yogurt or coconut cream.
