Berry Cobbler

A cozy, colorful dessert bursting with antioxidants

There’s something about a berry cobbler that feels like home. Warm, jammy fruit tucked under a golden, tender crust, served with a little dollop of yogurt or coconut cream if you like.

I love this recipe because it’s simple and flexible. You can use whatever berries are in season (or frozen in your freezer!), blueberries, raspberries, blackberries, or a mix. The colors alone are enough to lift your mood, and the flavors are even better. And as a bonus, berries are loaded with compounds that support your immune system and have powerful anti-cancer properties.

Servings: 6 servings

Ingredients

Berry Filling
  • 4 cups mixed berries (fresh or frozen)
  • 2 tbsp maple syrup or honey (adjust to taste depending on berry sweetness)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (or arrowroot)
Cobbler Topping
  • 1 cup almond flour
  • 2 tbsp coconut sugar or maple sugar
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 egg lightly beaten
  • 3 tbsp melted coconut oil (or butter)
  • 2 tbsp nut milk (almond, pistachio, or coconut)
  • 1/2 tsp vanilla extract

Method

  1. Preheat oven to 375°F. Grease an 8×8-inch baking dish or similar.
  2. Make the berry filling: In a bowl, mix berries, maple syrup/honey, lemon juice, and cornstarch. Pour into the baking dish.
  3. Make the cobbler topping: In another bowl, combine almond flour, sugar, baking powder, and salt. Stir in egg, coconut oil, milk, and vanilla until a thick batter forms.
  4. Assemble: Drop spoonfuls of the topping evenly over the berries (it will spread as it bakes).
  5. Bake for 30-35 minutes, until the topping is golden and the berries are bubbling.
  6. Cool slightly before serving. Enjoy warm, plain or with a spoonful of yogurt or coconut cream.

Why It’s Healing
Berries (blueberries, raspberries, blackberries) are rich in anthocyanins and polyphenols that protect DNA and fight oxidative stress. Studies link berry compounds to reduced growth of certain cancer cells.
Almond flour adds healthy fats and vitamin E, supporting immune and skin health.
Coconut oil provides healthy fats that help absorb fat-soluble antioxidants from the berries.
Lemon juice adds vitamin C, enhancing antioxidant effects and supporting collagen production.

This cobbler is cozy, naturally sweet, and just as welcome at a dinner party as it is for a weeknight treat. It’s proof that dessert can be both delicious and nourishing.
