Berry Cobbler

Ingredients
  

Berry Filling
  • 4 cups mixed berries (fresh or frozen)
  • 2 tbsp maple syrup or honey (adjust to taste depending on berry sweetness)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (or arrowroot)
Cobbler Topping
  • 1 cup almond flour
  • 2 tbsp coconut sugar or maple sugar
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 egg lightly beaten
  • 3 tbsp melted coconut oil (or butter)
  • 2 tbsp nut milk (almond, pistachio, or coconut)
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat oven to 375°F. Grease an 8x8-inch baking dish or similar.
  2. Make the berry filling: In a bowl, mix berries, maple syrup/honey, lemon juice, and cornstarch. Pour into the baking dish.
  3. Make the cobbler topping: In another bowl, combine almond flour, sugar, baking powder, and salt. Stir in egg, coconut oil, milk, and vanilla until a thick batter forms.
  4. Assemble: Drop spoonfuls of the topping evenly over the berries (it will spread as it bakes).
  5. Bake for 30-35 minutes, until the topping is golden and the berries are bubbling.
  6. Cool slightly before serving. Enjoy warm, plain or with a spoonful of yogurt or coconut cream.
