Pomegranate Chia Parfait

Ingredients
  

  • 1 cup unsweetened almond or oat milk
  • 3 Tbsp chia seeds
  • 1-2 tsp pure maple syrup or honey (to taste)
  • 1/2 tsp vanilla extract
  • pinch sea salt
  • 1/2 cup pomegranate arils
  • 1/4 cup unsweetened coconut yogurt or Greek yogurt (optional)
Optional Toppings
  • sliced kiwi, chopped pistachios, or toasted coconut flakes

Method
 

  1. Mix: In a jar or bowl, whisk milk, chia seeds, maple syrup, vanilla, and salt until combined.
  2. Rest: Let sit for 10 minutes, then whisk again to prevent clumping.
  3. Set: Cover and refrigerate for at least 2 hours or overnight until thickened.
  4. Assemble: Layer chia pudding with yogurt and pomegranate arils in a glass or bowl.
  5. Serve: Top with extra fruit or nuts just before serving.

Notes

Optional Add-Ons
  • Add a few tablespoons of cooked quinoa or amaranth for extra protein and texture.
  • Stir in a dash of cinnamon or cardamom for warmth and depth.
  • Drizzle with a touch of pomegranate molasses for tart intensity.
