Lemon Cod with Roasted Asparagus

Ingredients
  

  • 2 Cod Fillets (or other white fish)
  • 1 Bunch Asparagus trimmed
  • 2 Tbsp Olive Oil extra virgin
  • 1 Tbsp Coconut Oil (optional)
  • 1 Lemon juice and zest
  • 1 Tbsp Fresh Parsley chopped
  • Salt & Pepper to taste

Method
 

  1. Preheat the oven to 400°F. Arrange cod and asparagus on a baking sheet.
  2. Drizzle with olive oil, sprinkle with salt and pepper.
  3. In a small bowl, mix coconut oil (if using), lemon juice/zest, and parsley. Spread over cod fillets.
  4. Roast 12-15 minutes until the fish is flaky and asparagus is tender.

Notes

Optional Add-Ons & Swaps
  • Add cherry tomatoes to the pan for extra color.
  • Swap cod for salmon or halibut.
  • Serve with a side of quinoa or farro.
