Method
- Preheat the oven to 400°F. Arrange cod and asparagus on a baking sheet.
- Drizzle with olive oil, sprinkle with salt and pepper.
- In a small bowl, mix coconut oil (if using), lemon juice/zest, and parsley. Spread over cod fillets.
- Roast 12-15 minutes until the fish is flaky and asparagus is tender.

Optional Add-Ons & Swaps
- Add cherry tomatoes to the pan for extra color.
- Swap cod for salmon or halibut.
- Serve with a side of quinoa or farro.
