Pomegranate Chia Parfait
This layered parfait combines creamy chia pudding with juicy bursts of pomegranate – a fruit I personally keep on my radar for its role in supporting gut health during immunotherapy. Pomegranates are rich in compounds that help nourish Akkermansia muciniphila, a beneficial gut microbe linked to improved immune balance and resilience. Together with chia’s omega-3s and fiber, this dish offers a refreshing and restorative way to start the day or enjoy as an energizing snack.
- 1 cup unsweetened almond or oat milk
- 3 Tbsp chia seeds
- 1-2 tsp pure maple syrup or honey (to taste)
- 1/2 tsp vanilla extract
- pinch sea salt
- 1/2 cup pomegranate arils
- 1/4 cup unsweetened coconut yogurt or Greek yogurt (optional)
Optional Toppings
- sliced kiwi, chopped pistachios, or toasted coconut flakes
Mix: In a jar or bowl, whisk milk, chia seeds, maple syrup, vanilla, and salt until combined.
Rest: Let sit for 10 minutes, then whisk again to prevent clumping.
Set: Cover and refrigerate for at least 2 hours or overnight until thickened.
Assemble: Layer chia pudding with yogurt and pomegranate arils in a glass or bowl.
Serve: Top with extra fruit or nuts just before serving.
