Ingredients
  

  • 1/2 pound shrimp peeled and deveined
  • 1 tsp olive oil extra virgin
  • 1/2 tsp smoked paprika
  • 4 corn or almond tortillas small
  • 1 cup shredded cabbage (purple or green)
  • 1 lime juiced
  • 2 tbsp plain Greek yogurt
  • 2 tbsp fresh cilantro for garnish

Method
 

  1. Toss shrimp with olive oil, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium-high and cook shrimp 2-3 minutes per side until pink and cooked through.
  3. In a small bowl, mix shredded cabbage with lime juice and a pinch of salt.
  4. Stir yogurt with a squeeze of lime juice for a quick sauce.
  5. Warm tortillas, then assemble tacos with cabbage slaw, shrimp, yogurt sauce, and cilantro.
