Ingredients
  

  • 1 whole chicken (3-4 lbs) (or 4 chicken thighs)
  • 3 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 1 tsp dried thyme (or rosemary)
  • 1 lemon juice and zest
  • salt & pepper

Method
 

  1. Preheat oven to 400°F
  2. Mix garlic, olive oil, thyme, lemon juice/zest, salt & pepper. Rub all over the chicken
  3. Roast 40-50 minutes (for pieces) or ~1 hr 15 min (whole) until golden and juices run clear
  4. Rest 5-10 minutes before serving
