Avocado Toast Topped with Egg & More

Most recently, I topped my avocado toast with an egg, cherry tomatoes, pumpkin seeds, and a delicious cranberry pear balsamic vinegar from my pantry. The toppings are flexible. This is one of my go-to breakfasts, it’s fresh, nourishing, and packed with healthy fats and antioxidants. It’s simple enough for busy mornings, yet it feels like a little treat.

Avocado Toast Topped with Egg, Cherry Tomatoes, Pumpkin Seeds & Cranberry Pear Drizzle

Ingredients
  

  • 1 slice sourdough bread good quality
  • 1/2 avocado sliced
  • 1/2 lime juiced
  • 1 pinch sweet paprika
  • 1 pinch sea salt
  • 1 egg cooked over medium
  • 1 tsp olive oil extra virgin
  • 1 handful cherry tomatoes, halved (or pomegranate seeds)
  • 1 tsp pumpkin seeds
  • 1 light drizzle cranberry pear balsamic vinegar (or regular balsamic)

Method
 

  1. Toast the bread
  2. Mash avocado with lime juice, paprika, and salt
  3. Heat olive oil and cook egg over-medium – firm whites, soft yolk
  4. Spread avocado on toast, top with egg, tomatoes, and pumpkin seeds
  5. Finish with balsamic drizzle

  • Add broccoli sprouts for sulforaphane, a compound studied for cancer protection.
  • Swap tomatoes for pomegranate seeds for a tart, juicy pop.
  • Keep it ultra-simple with just avocado on toast when low on time.
