Brown Rice Pasta with Spinach, Walnuts & Parmesan
This is a quick, satisfying pasta tossed with garlicky spinach, crunchy walnuts, and Parmesan.
- 6 oz Brown Rice Pasta
- 1 cups Fresh Spinach
- 1 Tbsp Walnuts chopped
- 2 Tbsp Olive Oil extra virgin
- 1 clove Garlic minced
- 1/4 cup Parmesan grated
- pinch Red Pepper Flakes (optional)
Cook pasta according to package directions; reserve ¼ cup pasta water.
In a skillet, heat olive oil and sauté garlic for 30 seconds. Add spinach and cook until wilted.
Toss in cooked pasta, walnuts, and a splash of pasta water to bring it together.
Finish with Parmesan and chili flakes if using.
