This is a quick, satisfying pasta tossed with garlicky spinach, crunchy walnuts, and Parmesan.

Brown Rice Pasta with Spinach, Walnuts & Parmesan

Ingredients
  

  • 6 oz Brown Rice Pasta
  • 1 cups Fresh Spinach
  • 1 Tbsp Walnuts chopped
  • 2 Tbsp Olive Oil extra virgin
  • 1 clove Garlic minced
  • 1/4 cup Parmesan grated
  • pinch Red Pepper Flakes (optional)

Method
 

  1. Cook pasta according to package directions; reserve ¼ cup pasta water.
  2. In a skillet, heat olive oil and sauté garlic for 30 seconds. Add spinach and cook until wilted.
  3. Toss in cooked pasta, walnuts, and a splash of pasta water to bring it together.
  4. Finish with Parmesan and chili flakes if using.
